Salmon part of ‘food to go’ consumer trend

Demanding lives and healthy snacking are driving a UK food revolution as the ‘food to go’ trend takes hold. Retailers are adapting their food range to meet the needs of their busy customers and are embracing Scottish salmon as the versatile, delicious, nutritious and readily available ingredient that can help satisfy consumer tastes.

The UK’s favourite fish was added to more shopping baskets than ever before last year, according to a recently published Neilsen retailer report. Fresh was the most popular way to buy salmon. However, sales of sushi and pre-prepared salmon meals grew significantly suggesting that retailers and food producers are reacting to this new food trend by developing new recipes that are fit for the busy lives and snacking needs of today’s consumers.

Scott Landsburgh, chief executive of Scottish Salmon Producers’ Organisation said:

“Healthy convenience food is a food trend emerging in the domestic market for a few years now and retailers and food processors have responded positively and creatively. Thanks to its healthy credentials and versatility, salmon has been a major part of this revolution and, as an industry, we are delighted to see these new trends create even more strength in the domestic market”.
