Serves 4

Ingredients

150g packet of Boursin Cheese with Garlic and Herbs
Finely grated zest of 1 lemon
1 tbsp lemon juice
2 tbsp dried breadcrumbs
30g low or no salt crisps
4 scottish salmon fillets

To garnish:
Mixed leaves
Method

1. Preheat the oven to 200C Fan/ Gas mark 8.
2. Put the cheese in a bowl and add the lemon zest, juice and breadcrumbs. Mix well.
3. Put the salmon fillets onto a piece of baking parchment or lightly greased foil on a baking tray. Make sure there are gaps between them to allow for even cooking.
4. Divide the cheese mixture into four and spread carefully on each fillet to cover completely.
5. Crush the crisps to small pieces and press on top of the cheese. Place in the preheated oven for approximately 10 minutes or until the salmon is just cooked and the top is golden and crisp.
6. To serve, place on plate with a bed of mixed leaves.
